Duties
HelpPerforms duties which include, but are not limited to, the following:
- Cooks simple, well-defined foods using recipes for groups ranging in size from 120-150. Foods prepared include items such as pancakes, eggs, hamburger dishes and fresh or frozen vegetables and fruits, casserole.
- Prepares and cooks hot cereals, meats, gravies and soups and other comparable items.
- Prepares food by peeling, chopping, paring, cutting, slicing, dicing, pureeing, dredging, flouring or breading.
- May prepare convenience items on a limited basis.
- Regulates cooking temperature and steam pressure, checks for correct cooking time and condition of food being cooked.
- Seasons according to set procedures.
- Interacts with children and other customers in a polite and courteous manner.
- May set up and replenish serving carts for individual activity rooms.
- Determines quantity of ingredients needed for required yields based on daily attendance.
- Follows standardized menus and recipes to assemble quality products.
- Maintains an accurate food inventory, rotates stock to follow first in first out.
- Labels food items accordingly.
- Assists in ensuring health and sanitation standards within the facility kitchen area.
- Cleans and sanitizes kitchen equipment and dishware.
- Keeps storage area, walls and ceilings, floors, worktables, and appliances clean and sanitary.
- Sweeps, mops floors as needed. Dispose of trash.
- Uses and assures proper fit of required safety equipment and clothing.

Qualifying Experience:
- Must have experience in and knowledge of food preparation principles and characteristics of food, and of planning processes to ensure entire meals are prepared and cooked on time.
- Knowledge to perform yield testing to determine portion cost and to adjust ingredients in standardized recipes.
- Must have knowledge of procedures to order, issue and store food.
- Experience and knowledge must have been gained in a grill, snack bar, restaurant, club or similar food activity.
- Must be physically able to frequently lift objects weighing up to 40 pounds, and occasionally over 40 pounds.
- Must be able to continuously stand, walk, stoop, reach, push, pull and bend for long periods of time.
Education
Some federal jobs allow you to substitute your education for the required experience in order to qualify. This position does not allow for education substitution in order to qualify.
